Curry base gravy

Ingredients

  • 600g onions
  • 175g tomato
  • ½ a carrot
  • 40g green pepper
  • 25g garlic
  • 40g tomato puree
  • 1 tsp salt
  • 125ml oil
  • 1600ml water
  • 3 tsp of spice mix (recipe here)
  • 1 tsp curry powder
  • 20g fresh coriander (pref stalks)

Method

  1. Chop onion, carrot, tomato, green pepper and garlic.
  2. Add to pot along with tomato puree, salt, oil and water.
  3. Simmer for approx. 1 hour.
  4. Add spice mix, curry powder and fresh coriander. Simmer for 10 mins.
  5. Allow base to cool then blend to a soup-like consistency
