Staff curry

Ingredients

  • 1kg lamb, beef or chicken diced
  • 2 large onions, finely diced
  • 1 tin peeled tomatoes, chopped
  • 2 tbsp tomato puree
  • 5 potatoes, peeled and diced
  • 1 tbsp garlic paste
  • 1 tbsp ginger paste
  • 5 tbsp veg oil
  • 2 tbsp coriander powder
  • 2 tbsp cumin powder
  • 1/2 tbsp turmeric
  • 1/2 tbsp chili powder
  • 1 tbsp garam masala powder
  • Juice of ½ lemon

Method

  1. Heat oil in medium saucepan
  2. Add onions and fry till golden
  3. Add all spices except garam masala and fry of 2-3 mins
  4. Add tomatoes, salt, garlic, ginger and fry for 10 mins, add a little water if gets too dry
  5. Add tomato puree and cook till sauce is dry
  6. Add meat and cook on a medium heat, stirring occasionally until meat is cooked
  7. Add 2-3 cups water and cook until sauce is nice thick consistency
  8. Add potatoes and cook till tender
  9. Add garam masala and lemon juice
  10. Bring up to heat and serve
